Traditional Shortbread Recipe
9 oz softened butter
3/4 cup confectioners sugar
1 teaspoon vanilla extract
2 cups All Purpose Flour
1/2 cup rice flour
Preheat oven to 325°F. Grease 2 sheet pans and line with parchment paper. Beat butter, 2/3 cup sugar, and vanilla with electric mixer until light and fluffy. Mix in both flours.
Divide dough into 2 equal portions and roll each into an 8” round disc.
Using a small knife, score each round without cutting all the way through into 8 wedges. Press edges with fork into a scalloped effect. Prick top of rounds with a fork. Sprinkle with remaining sugar.
Bake for 20 minutes or until golden, turn sheets halfway through cooking. Cool on the sheet pans and serve with a proper Holiday Tea from AdirondackTea.com . Sprinkle with powdered sugar if desired.
